Escaping from guard (make sure you use that shoulder pressure!):
Another variation of the standing guillotine escape (0:28 onwards):
Escaping the mounted guillotine, basically you have to strip his legs by rolling or pushing his hips up and then get to a side control shoulder pressure position as above:

Also don't forget to turn your chin into your opponents ribs, it will be uncomfortable for your opponent and will relieve some pressure.
